Berry Lemon Slushy

 

Summers in Arizona are hot! And when you live off grid like we do we need simple ways to stay cool. This berry lemon slushy is made with 4 simple ingredients, is diabetic friendly, and full of electrolytes. It’s the perfect frozen treat to help beat the summer heat and to help replenish electrolytes that are easily lost when it’s hot or you are spending more time outside than usual.

 

What You’ll Need

  • Frozen berries of choice
  • Lemon juice
  • Maple syrup
  • Pink Himalayan salt
  • Blender

*Optional if desired you can add collagen to pair this delicious treat with some protein. Find my favorite collagen here.

*Notes, the salt and maple syrup that are included in this recipe are full of trace minerals and electrolytes, so if you want the added benefits of the electrolytes avoid substitutions.

 

Directions

Makes 2-4 servings

  1. Mix 1 tablespoon of lemon juice, 1 tablespoon of maple syrup, and a pinch of salt together and set aside. If adding the optional collagen add one scoop and a teaspoon of water to the lemon juice mixture before pouring the mixture into the blender.
  2. Add 2 cups of the frozen berries of your choice to your blender and pour the lemon juice mixture over the berries.
  3. Blend in short 2-3 second bursts until the berries resemble a slushy. Blend more or less if you desire bigger or smaller frozen chuncks.

* Note, avoid over blending or you will end up with a more smoothie like consistency. Use a spatula to push the larger chuncks down if necessary to ensure the berries blend evenly.

 

And that’s all there is too it! In less than 5 minutes you can have a healthy frozen treat for you and your kids to enjoy all summer long.

 

Optional twist

Turn this berry lemon slushy into popsicles!

Add 1/2 a cup of water to the blender with the rest of the ingredients and blend until smooth. Pour into popsicle molds and freeze for 3-4 hours.

Popsicles are fun and it’s great to be able to give our kids healthy alternatives that are yummy too!
