Chocolate Almond Butter Protein Cookies
I don’t know about you but I love cookies. It’s probably one of my favorite sweet treats. Unfortunately most cookies are loaded with refined sugar and flour which is highly inflammatory and just overall not great for your health. I was recently reminded of a flourless peanut butter cookie that was a favorite of mine prior to needing to eliminate peanut butter from my first y and I decided to try and make a sugar free version with almond butter instead. The result is a yummy cookie that’s actually healthy, full of protein, and sugar free. These Chocolate Almond Butter Protein Cookies are obviously made with chocolate but the chocolate can be omitted for just a plain almond butter cookie.
What you’ll need

- Almond Butter
- Eggs
- Stevia or monk fruit
- Salt
- Vanilla
- Collagen. Find my preferred collagen here.
- Almond flour (optional)
- Chocolate protein powder of choice. You can omit this or use a vanilla protein powder instead if you don’t want these to be chocolate. Find my preferred protein powder here.

- Add 2 eggs, 1 cup of almond butter, and 1-2 teaspoons of stevia and mix thoroughly. If using monk fruit or another sweetener you’ll need to adjust the amount.
- Add in 1/4 teaspoon of salt and 1/2 teaspoon of vanilla. You’ll want to consider using less vanilla if you’re using a vanilla protein powder instead of chocolate.
- Add in 2 scoops of collagen, 2 scoops of your protein powder of choice. Mix thoroughly.
- If you desire a thicker cookie dough add 1/4 cup of the optional almond flour. We’ve made the cookies both ways and prefer with the almond flour.
- Place a golf ball size amount on your cookie sheet and bake at 350⁰ for 12-15 minutes or until cookies are no longer soft in the middle.
And there you have it. These Chocolate Almond Butter Protein Cookies are a simple and easy cookie to make and can be ready to go in half an hour.
This recipe will make 6-8 cookies and will have approximately 10-15 grams of protein per cookie depending on the protein powder used.
