Dairy and Gluten Free Chicken Pot Pie Filling

Chicken pot pie is a family staple in our home, rich, hardy, and absolutely delicious, this meal is a must have in our house. When we went gluten and dairy free several years ago it was extremely difficult to find a good recipe to keep this family favorite on the table.
After lots of trial and error, I finally perfected my dairy and gluten free chicken pot pie filling. This filling can be put into a gluten and dairy free pie crust for the traditional pot pie meal, or it can be served over dairy and gluten free biscuits or rolls. What You’ll Need
- 1lb of boneless chicken breasts or thighs
- 2 cups sliced carrots
- 2 cups sliced celery
- 1/2 cup sliced mushrooms
- 2 tablespoons chopped chives
- 1/4 cup tapioca starch or GF flour of choice
- Vegan butter or cooking fat of your choice
- 1 cup of bone broth
- 2-3 cups of water
- Salt and pepper to taste
This will make approximately 6-8 servings
Directions
1- Add 2 tablespoons of vegan butter or cooking fat to your cast iron pan and saute carrots, celery, mushrooms, and chives for 10 minutes. Remove the veggies and set aside leaving any liquid produced in the pan.
2- Dice chicken into small bite size pieces and add to pan with bone broth and cook for 10 minutes. Return veggies to pan and bring to a simmer
3- Mix 1cup of cold water with the 1/4 cup of tapioca starch or GF flour. Add to the pan stirring frequently. Add 1-2 cups of water depending on desired thickness. Continue to stir frequently while your filling thickens into a nice creamy, gravy like consistency. Salt and pepper to taste.
4- If making into a pie add your filling to your pie crust and bake at 400⁰ F for 20-30 minutes.
5- If serving over biscuits or rolls simply serve the filling and enjoy!
