Dairy Free cream of mushroom

If you’re dairy free like our family then you might sometimes crave those delicious creamy dishes like cream of mushroom, but it can be difficult to find one in the store. And a lot of the recipes out there use corn starch which is a big no in our house.  Beef stroganoff was a staple in our home so I was determined to make not only a dairy free cream of mushroom, but also a gluten, corn, and soy free version as well. Taste wise this soup doesn’t disappoint and it’s delicious all on its own. It took a little trial and error to get it to thicken up a little but thankfully I was able to achieve a delicious creamy blend. 

 

What you’ll need

  • Mushrooms
  • Dairy free milk of choice we prefer almond milk. 
  • Bone broth
  • Olive oil
  • Brown rice flour
  • Garlic
  • Rosemary
  • Chives
  • Salt
  • Pepper
  • Sauce pan

 

Directions

  1. In your sauce pan lightly saute 1lb of mushrooms and 1/4 cup of chives in 1/2 tbsp of olive oil and set aside.
  2. Add another 1/2 tbsp of olive oil and 3 tbsp of brown rice flour to your sauce pan and mix until a paste forms.
  3. Add 1 cup of dairy free milk and 1 cup bone broth and mix thoroughly. Bring mixture to a slight boil then reduce heat and let simmer to make your cream base.
  4. Blend mushrooms and chives with an immersion blender or food processor. Add blended mushrooms to your cream base mixing thoroughly.
  5. Season to taste. We put 1 tbsp of garlic and rosemary and 1 teaspoon of black pepper and pink salt. You can adjust the seasons to your preferred taste.

 

Final Thoughts 

A serving size is approximately 1/4 cup making approximately 8 servings. Serve over your choice of meat and rice or noodles. We prefer 93% lean beef and zoodles (zucchini noodles) but also love using spaghetti squash and chicken too. And of course who doesn’t love a hearty pasta every now and then. It’s so versatile you can mix it up and really make it your own.

 

Also the cream base from step 2 can be used in a variety of dishes. Use vegan cheese to make a cheese sauce, use it to make chicken pot pie, or use it for a creamy potato soup. The possibilities are endless!
