Peppermint Bark

Christmas is just around the corner and that means lots of holiday baking and treats. Unfortunately many store bought treats and even most homemade recipes are full of sugar and less than ideal ingredients like food dye and artificial flavors. When we decided to remove those things from our diet and, our first Christmas came around, peppermint bark was something we set out to find an alternative for.

 

Make It Yourself

Thankfully many of these treats can be made at home with wholesome ingredients and a lot less sugar. When we learned just how easy making peppermint bark is, making it ourself became a no brainier.  In this post I’ll walk you through a quick and easy way to make peppermint bark that is free of food dye, artificial flavors, and other nasty ingredients that we try to avoid in our home. And! A serving of this only has 6g of sugar, even my type 1 diabetic can enjoy these without spiking his blood sugar.

 

What You’ll Need

  • Organic dairy free dark chocolate. Milk chocolate can be used but it will have a little more sugar than the dark chocolate. We use the enjoy life chocolate chips but any organic chocolate with a lower sugar quantity will do. 
  • Organic dye free candy canes. We use Yum Earth. Get them here
  • Pure vanilla extract
  • Collagen (optional) I get mine here
  • A small glass bowl for melting the chocolate
  • A glass baking dish. I like to use a small 9×9 square dish.

 

Directions

  1. Melt 2 cup of chocolate
  2. Mix in 1 tsp of vanilla and 2 scoops of collagen.
  3. Pour melted chocolate mixture into a lightly greased baking dish.
  4. Crush 2 candy canes and sprinkle evenly over the chocolate.
  5. Place dish in the fridge to chill for 1 hour.
  6. Cut into 1 inch squares and enjoy!

 

Finally Notes 

This simple recipe takes less than 5 minutes of hands on time to make and tastes amazing. If you desire more peppermint flavor add a little peppermint extract to the melted chocolate mixture before pouring it into the glass pan.

While the collagen is optional I highly recommend it. Collagen is full of health benefits and is a healthy source of protein and fat, both of which will help keep blood sugar stable. Additional, I’ve found it helps the recipe come together all the better. Since unflavored collagen has virtually no taste when mixed with other ingredients there’s really no reason not to include it!
