Peppermint Hot Cocoa
Who doesn’t love a good hot chocolate in the winter. Even in Arizona there’s just something about a snowy afternoon that makes me want to enjoy a nice hot chocolate. Now for those of us who can’t have dairy finding a yummy alternative that doesn’t have a ton of junk in it can be a challenge. We also try to avoid large amounts of sugar, especially for my type 1 diabetic son, so we were glad to have come up with a recipe last year that was both delicious and made with wholesome ingredients, that will also not have a huge impact on my son’s blood sugar levels. Take the cocoa to the next level by adding a little peppermint.
Cocoa To Perfection
It took a lot of trial and error to come up with the perfect hot cocoa but with lots of experimenting we finally found a blend that was both kid and mom approved. This recipe is different then my other recipe I’ve shared in the past. I like this one better because I can make a whole bunch of drink mix ahead of time and I don’t need to cook it in a sauce pan. Originally for this recipe we used monk fruit but since my son’s diagnosis we switched to stevia because it has a lower impact on my his blood sugar. We’ve not noticed any difference in the taste or texture.
What You’ll Need

- A 1qt. mason jar with lid
- Organic raw Cocoa
- Stevia or monk fruit
- Organic dye free candy cane. (We use Yum Earth)
- Collagen (I get mine here)
Directions
- Add 2 cups of Cocoa powder, 3-4 cups of stevia or monk fruit, and 1 cup of collagen to your mason jar.
- Put the lid on a shake it all up.
- Add 2-3tbsp to your warm dairy free milk of choice or water. Mix thoroughly and enjoy.
- If desired add some crushed candy cane for a delicious peppermint hot cocoa.
FINAL NOTESĀ
The collagen is optional but I highly recommend it because it helps everything to mix together a little better. It’s also full of health benefits and doesn’t effect the taste at all. The protein and the fat found in the collagen also help reduce the impact of the sugar in the cocoa.
Add more or less sweeten depending on your preference. We choose to only put 3 cups in.
