Sugar Free Cookie Dough Bites
Have you seen those cookie dough bite recipes floating around the internet? They are all the rage right now because they are grain free, gluten free, dairy free, vegan, and made with whole food ingredients. I decided to tweak the recipe a little to also make them sugar free so my son with type 1 diabetes could also enjoy them without spiking his blood sugar. These sugar free cookie dough bites are much lower on the glycemic index than anything made with flour and my son absolutely loves them. My other children devoured them as well and they often request I make more.
They are easy to make but do require some planning ahead if you are using dried chick peas vs canned chick peas.

- Chick peas (dry or canned)
- Water
- Almond flour
- Peanut butter or nut butter of choice
- Stevia or monk fruit
- Vanilla
- Cinnamon
- Salt
Directions
- If using dry chick peas soak 1 cup in water for 24-36hrs then boil for 2hrs. If using canned chick peas proceed to step 2.
- Combine 2 cups of chick peas, 1/2 of peanut butter, or nut butter of choice, 1/4 cup of almond flour, 2 tsps of stevia, 1 tsp of vanilla, 1 tsp of cinnamon, and a pinch of salt into your food processor or mixing blow if using an immersion blender. We use an immersion blender but either way will get the job done. *Note if using monk fruit instead of stevia you’ll need to use 1 table spoon.
- Begin blending the ingredients adding a couple tablespoons of water at a time. You want enough liquid to help things blend well but you want to make sure you don’t lose the dough’s thick paste like consistency.
- Begin shaping the dough into balls the size of a golf ball. You should get 12-14 sugar free cookie dough bites depending on size.
- Chill the sugar free cookie dough bites in the fridge for half an hour and enjoy.
Chocolate chip adaptation
For the chocolate chip adaptation you will prepare as instructed in step 1 and 2 but will omit the cinnamon. Once the dough is blended you will mix in 1/4 to 1/2 cup of sugar free chocolate chips according to your preference. Proceed to form the dough into balls as instructed in step 4 and chill as instructed in step 5.

Hands on time for the recipe is less than 30 minutes but you will need to plan extra time for soaking and cooking chick peas if you choose to use dried chick peas vs canned. We do mostly use dried chick peas but canned work just fine.
